No-bake Chocolate Log "Cake" |

To serve 4-5 people: 1 packet flavoured bicuits (NB: NOT coated with sugar chocolate or jam/jelly) 1 small container thickened cream 2 cups coffee - I use dripolated although you can use instant 2 tablespoons of dark rum or liqueur of your choice, add to the coffee chocolate shavings additional whipped or thickened cream to serve (1 largish ctn) fresh fruit such as strawberries or kiwifruit* *for littlies - beanies/smarties etc make a suitable, colourful substitute - but please remember to delete the spirits (Rum!) |

I had this at a gathering quite a time ago and was so impressed
with the results and after getting the recipe, the lack of expense. I have made this using chocolate flavoured biscuits (cookies) although you could use any flavoured plain biscuit. (aka: cookie - vanilla, shortbread,ginger I believe are very good also). Lay a piece of aluminium foil on the bench it should be about 15 inches square. Take 1 biscuit dip it quickly into liqueur/coffee then smear with approx 1 teaspoon of thickened (or whipped) cream with a spreading knife.Place it about 4 inches from a corner on the foil cream side up. Place each additional biscuit on top of the previous one (sandwiching them together, using the cream) Continue with remaining biscuits till you get a stack of 4, then lay the stack on its side pointing towards the opposite corner. Continue with all remaining biscuits. Roll up the 'log' with the aluminium foil and refrigerate for about 1 hour. I make these to serve the following day, the minimum requirement is 1 hour although the longer they are left in the fridge the more flavoursome they become. You could make them up to 3 days ahead of time! To serve you will need additional whipped cream. Unroll the 'log' onto a serving plate. Smear generously all over with cream, decorate with sliced fruit and sprinkle on chocolate curls/shavings. These are extremely easy to 'mould' into numbers for little people's birthday cakes - but make sure to delete the alcohol (or you'll have some irate Mums and Dads on your case, and decorate with smarties or beanies |
