Spinach and Fetta Parcels |

250g Block of fetta cheese 1 pkt frozen chopped spinach (fine leaf variety - Finessa is good brand) 1 egg 1 finely diced onion 1 to 2 cloves finely minced garlic extra egg/milk for glazing pastry sesame seeds |

Thaw spinach in microwave or stovetop.Remove all excess liquid. In large bowl crumble fetta cheese, add well drained spinach. Mix well to incorporate. Add beaten egg, garlic and onion. Spoon small quantity of mixture onto squares of thawed pastry (whatever size parcel you like and use - entree, hors doeuvres, main) Brush edges with egg/milk wash. Seal parcel edges using a fork. Place on greased tray, brush with egg/milk wash, cut diagonal criss-cross lightly into top of each parcel, then sprinkle with sesame seeds. Bake at 200 DegC for approx 10-15 minutes for small parcels, up to 30-40 minutes for parcels using full sized sheet. Allow to cool slightly before removing from tray. |
