Wicked Chocolate Fudge Cake

125g butter (NOT margarine)
1 cup brown sugar
2 eggs
1 tsp vanilla essence
1 cup milk*
2 tsp white vinegar*
2/3 cup cocoa
1/2 cup hot water
1 3/4 cups Plain flour#
1 tsp baking powder#
1 tsp bicarbonate of soda#
* sour the milk with the vinegar
# sift flour, baking powder and bicarb. soda.

Preheat oven to 180DegC.
Mix cocoa and hot water and mix to a smooth paste.
Cream butter and sugar till creamy.
Add eggs one at a time, beating well after each addition.
Add vanilla. Beat well.
Add cocoa/water to butter mixture. Beat well.
Add alternately, flour and milk.
Pour into two sandwich tins and bake for 1/2 hour.
To Serve:
Sandwich together with raspberry, blackberry or boysenberry jam.
