Scottish Shortbread

1/2 lb plain flour
2-3oz castor sugar
pinch salt
4-6oz butter
Preheat oven to 350DegF.
Sieve flour and salt and add sugar.
Rub in fat and knead it gently to a light dough.
Do not add any water or milk!
Shape into a round or square 6-7 inches
Place on floured tray and scallop the edge.
Prick the shortbread with a fork.
Cook in a moderately slow oven for 30 minutes.
