Spotted Dick

1 pkt Suet
1/4 cup plain flour
1 tsp baking powder
1 tsp mixed spice
1/4 cup castor sugar
3/4 cup currants
1 tsp grated lemon zest
1 egg
1/2 cup milk
1/4 cup golden syrup
Combine dry ingredients in a bowl and mix well.
Beat egg and milk together, and add to dry ingredients.
Beat well until thoroughly combined.
Spoon the mixture into a lightly greased 1 litre (2 pint) pudding basin or steamer.
Cover securely with lightly greased, pleated greaseproof paper.
To seal, cover with aluminium foil or a tightly fitted lid.
Immerse the basin into a saucepan of boiling water and steam for 2 hours.
Check saucepan regularly - do not allow to boil dry.
To serve:
Turn onto a serving platter. Heat golden syrup and pour over the pudding.
Serve immediately.

Packet of Suet - a commercial blend of 40% rendered beef suet and 60% aerated flour produced by Tandaco - Cerebos Australia Ltd.
Golden Syrup - A dark coloured treacle made from sugar cane, a by-product of crystalline sugar manufacture.
