Peel the potato's, then grate them (not to fine) blend in oil and spices. Line the quiche dish with the potato mixture. Bake in 225 Celsius for about 15min or until the potato has partly cooked.
During that time, you grate the carrots fine, clean and slice the leek thin. Beat the cream and eggs, mix in carrots leek and parsley, and add the vegetable salt to taste.
Pour mixture into the quiche dish sprinkle over the grated cheese. Bake for approx another 30 minutes until the quiche has a nice colour and is set.
For a extra flavour you can add additional cheese in with the cream and eggs.
