Ingredients

2 cups rice, cook and cool (makes about 6 cups)

4—5 rashers bacon ( add diced, cooked chicken, even left over snags) 5 spring onion, chopped

1 green capsicum (diced)

100 gram bean shoots ( can be tinned but fresh is better)

Soy sauce to taste

Oil

Cook rice to taste—about 10 minutes, drain and cool

Beat eggs separately—heat oil in pan and cook omelettes, cool.

Heat pan—cook chopped bacon rashers. Add spring onions and capsicum. Stir fry for a few minutes.

Add bean shoots—stir fry 1 minute

Add cooked rice, stir through.

Add Soy sauce to taste

                Toss in sliced egg omelettes.

Serve hot , suitable for 4 hungry fishermen!
