Once fats have been hydrogenated, they become very hard for our body enzyme to metabolize them. So stay away from processed, damaged and over cooked fats, but should keep some dietary fats in your diet.

What Important functions do good fats provide in your body?
Your body release a hormone called cholecystokinin (CCK) when fats are consumed. CCK is important in telling the brain instantaneously that you are full and not hungry any more (opposing to carbohydrate; takes time for digestion and absorption, before your body realize you are full already). So eating good fats will cause CCK to be released and actually helps to stop eating. Most importantly, fats helps to slow down the absorption of glucose, hence stabilized the insulin level. When the body decided that it is deficient in fats or proteins, it will break down muscle mass and bone mass, leads to higher body fat storage.

Provided a stable insulin level is maintain, dietary fats do not turn into body fat, so do eat fats and choose the good fats like fish oil, olive oil, macadamia nuts and avocados.
