Let me introduce "Glycemic index" (GI)- a numeric index that measure the rate that body convert sugar into glucose (glycemic respond). Scale from 0-100, foods that cause faster increase in blood sugar level score higher (pure glucose score 100 as the reference). So the trick in fat burning diet is to eat complex carbohydrate which has a low GI.

The rate of carbohydrate breaking down into the blood stream is extremely important in fat burning diet, because that would determine the amount of insulin (fat storage hormone) to be produced by the pancreas. Insulin is the body fat storage hormone. It is produced by the pancreas in response to increase blood sugar level. This would in turn drive your body to consume glucose for energy, and store any excess away as fat.

The most important concept in dieting is a balance of fat burning protein hormones glucagon and insulin is the key factor in here to determine between fat burning or fat storage.

A fresh orange with it's natural fiber is much better than drinking just the orange juice. The fiber in an orange acts like a jamming factor which slow down the traffic in the blood vessels, hence slow down the absorption of glucose.

How much can we eat fat burning carbohydrate?
For low GI and high fiber Vegetable, it's quite ok to eat an amount of about 2 large handfuls. While with high GI carbohydrate, limit the amount to about one small handful.
