Sweet Chilli Chicken Noodle Salad
Ingredients
- 2 BBQed chicken breast fillets
- bean or rice vermicelli
- 1 spanish onion
- 100 g snow peas
- 2 medium carrots
- ½ red capsicum
- ½ green capsicum
- Sweet chilli sauce
Method
- Cook the bean/rice vermicelli until al dente.
- Finely slice the BBQed chicken breast fillets.
- Finely slice spanish onion.
- Slice snowpeas lengthwise.
- Finely slice the capsicum.
- Coarsley grate the carrot.
- Combine all the ingredients in one bowl.
- Add sweet chilli sauce and toss.
Notes
- We tend to make this salad with left-over Moroccan flat chicken that we've cooked on the BBQ.
