Jacinta's Potato Salad
Ingredients
- 1 kg washed potatoes
- 1 large onion or half bunch of spring onions
- 3 boiled eggs
- 100 g ham
- Small bunch of parsley
- 1 heaped tbsp cream
- 2 heaped tbsps mayonnaise
- ¼ cup water
Method
- Cook the potatoes in the microwave until cooked but still firm. You can test the potatoes with a skewer.
- Finely slice onion/ spring onions.
- Boil the eggs so that they are half-way between soft and hard boiled.
- Finely slice the eggs and ham.
- Beat the cream, mayonnaise and water together.
- Combine all the ingredients in one bowl.
- Sprinkle with finely sliced parsley.
Notes
- If the potatoes are unblemished, leave the skins on.
- Serves six to eight.
