Jacinta's Potato Salad

Ingredients

Method

  1. Cook the potatoes in the microwave until cooked but still firm. You can test the potatoes with a skewer.
  2. Finely slice onion/ spring onions.
  3. Boil the eggs so that they are half-way between soft and hard boiled.
  4. Finely slice the eggs and ham.
  5. Beat the cream, mayonnaise and water together.
  6. Combine all the ingredients in one bowl.
  7. Sprinkle with finely sliced parsley.
