Amish Banana Cake
Ingredients
- 2/3cup butter (approx 180g)
- 1&2/3 cup raw sugar
- 3 eggs (room temperature)
- 2 ¼ cups plain flour
- 1 ¼ tsp bicarb soda
- 1 ¼ tsp baking powder
- 2/3 cup buttermilk
- 1¼ cups mashed bananas (approx 2 large)
Method
- Cream butter and sugar.
- Add eggs and beat well.
- Sift flour, bicarb soda and baking powder into mixture alternatively with buttermilk until all added.
- Stir through mashed bananas.
- Bake in a moderate oven for ~45 mins
Notes
- Makes two round cakes or loaves.
- These cakes are great as is but for a special occasion I suggest icing it with butter/vienna icing.
