Cherry tomato barramundi
Ingredients
- 1 large barramundi fille
- 1 punnet of cherry tomatoes
- 2 cloves of garlic, finely chopped
- small bunch of fresh basil, chopped
- small bunch of fresh oregano, chopped
- olive oil
Method
- Place barramundi fillet in an oven proof dish with halved cherry tomatoes, garlic and dash of olive oil.
- Cover dish with foil and bake in moderate oven for 20 mins.
- Add fresh basil and oregano and cook for another 10 mins.
- Serve on a bed of rice with freshly steamed vegetables.

- Makes three to four serves.
