Cherry tomato barramundi

Method

  1. Place barramundi fillet in an oven proof dish with halved cherry tomatoes, garlic and dash of olive oil.
  2. Cover dish with foil and bake in moderate oven for 20 mins.
  3. Add fresh basil and oregano and cook for another 10 mins.
  4. Serve on a bed of rice with freshly steamed vegetables.
