Beef Casserole

Method

  1. Trim and cube the round steak. Lightly brown in olive oil and butter.
  2. Add onion, garlic and a sprinkling of dried oregano and basil.
  3. Add diced potato (~2 cm cubes) and diced sweet potato.
  4. After simmering until potatoes are cooked but firm, add sliced carrots, quartered mushrooms, finely chopped tomato and silverbeet stalks.
  5. Continue to simmer casserole so that in total the meat has not cooked less than one hour
  6. Add sliced silverbeet/ spinach a couple of minutes prior to serving.
