Beef Casserole
Ingredients
- 1 kg round steak
- 1 large onion
- 1 large clove garlic
- 2 large potatoes
- 1 large sweet potato
- 100g mushrooms
- 2 carrots
- 1 large tomato
- small bunch spinach or silverbeet
- dried basil and oregano
- 1 tbsp of butter
- olive oil
Method
- Trim and cube the round steak. Lightly brown in olive oil and butter.
- Add onion, garlic and a sprinkling of dried oregano and basil.
- Add diced potato (~2 cm cubes) and diced sweet potato.
- After simmering until potatoes are cooked but firm, add sliced carrots, quartered mushrooms, finely chopped tomato and silverbeet stalks.
- Continue to simmer casserole so that in total the meat has not cooked less than one hour
- Add sliced silverbeet/ spinach a couple of minutes prior to serving.
