Beef Peanut Curry
Ingredients
- 500 g round steak
- 1 medium onion
- 2 carrots, finely chopped or coarsely grated
- 1 finely chopped red capsicum
- Small head of broccoli and cauliflower, chopped into small pieces
- 1 tbsp curry paste
- 2 tbsps dessicated cocnut
- ½ cup milk
- ½ cup crushed peanuts
- olive oil
Method
- Slice the round steak into thin strips.
- Place curry paste into hot olive oil in wok.
- Once cooked, add the round steak to the wok and lightly brown.
- Heat the milk and dessicated coconut in a cup in the microwave for 40 seconds. Voila! Coconut milk!
- Add coconut milk to pan (with or without straining - up to you!) and simmer for ~10 mins.
- Add crushed peanuts and simmer for a further 5 mins.
- Add broccoli and cauliflower and continue to simmer. When they are almost cooked, add capsicum and carrot.
- Once the capcisum is tender, it is ready.
Notes
- Serve with basmati rice.
- Serves four.
