Buttermilk Pancakes
Ingredients
- 1½ cups milk
- ½ cup buttermilk
- 125g unsalted butter
- 2 cups plain flour
- 1 tsp bicarb soda
- pinch salt
Method
- Heat milks in a saucepan until just below boiling. Add butter (chopped in small cubes) and remove from heat. Do not panic if the mixture curdles a bit at this point - all will become well in the next step!
- When butter has melted, add flour, bicarb soda and salt and stir until loosely combined.
- Place soup ladle worth of mixture in heavy based frying pan and cook for couple of minutes each side (The batter should become light and airy before turning over!).
- Serve with fruit (banana, berries, lemon) and icing sugar or maple syrup and ice cream.
Notes
- Makes 10-12 pancakes. I use one third of the mixture for two.
