Buttermilk Pancakes

Method

  1. Heat milks in a saucepan until just below boiling. Add butter (chopped in small cubes) and remove from heat. Do not panic if the mixture curdles a bit at this point - all will become well in the next step!
  2. When butter has melted, add flour, bicarb soda and salt and stir until loosely combined.
  3. Place soup ladle worth of mixture in heavy based frying pan and cook for couple of minutes each side (The batter should become light and airy before turning over!).
  4. Serve with fruit (banana, berries, lemon) and icing sugar or maple syrup and ice cream.
