Cheeseless Quiche
Ingredients
- 6 slices of short cut bacon, sliced
- 1 corn cob, cooked and corn removed
- 100 g mushrooms, sliced
- 1 red capsicum, thinly sliced
- 2 large zucchinis, grated
- 3 eggs
- 1 cup milk
- 3 heaped tbsps of corn flour
Method
- In a quiche dish, place in order (from base to the top) the bacon, corn, capsicum, mushrooms and grated zucchini.
- Whip up eggs, milk and corn flour and pour over the ingredients.
- Bake in a moderate oven until fully cooked. In my experience this quiche takes more than an hour. I usually cover it with aluminum foil for the first forty five minutes to prevent the top from burning.
