Creamy Chicken Pasta
Ingredients
- 1 chicken breast fillet
- 4 short bacon rashes
- 1 large clove garlic
- 200g mushrooms
- 1 spanish onion
- 1 heaped tbsp cream
- Sprinkle of dried oregano and basil
- And any two of:
- ½ green capsicum
- 1 bunch asparagus
- 1 small head broccoli
- 1 bunch spinach
Method
- Cook diced chicken breast in olive oil with half finely diced garlic and sprinkling of dried basil and oregano.
- Remove chicken from pan and set aside.
- Fry finely slice bacon.
- Add cream, the rest of the garlic and another sprinkling of dried basil and oregano.
- Add mushrooms, spanish onion and broccoli and simmer for few minutes.
- Add capsicum/asparagus and simmer for a few minutes
- Add spinach just before serving.
Notes
- Serve with your choice of al dente pasta. Put the water up to boil before commencing to cook the sauce!
- Serves four.
