Grossmama's Knoepfli
Knoepfli is kind of like a swiss gnocchi!
Ingredients
- 2 cups plain flour
- 1 cup self-raising flour
- 1 tbsp semolina
- 3 eggs
- small glass of water (or 1:1 milk:water mixture)
Method
- Sift flour and add semolina
- Add eggs one at a time and mix in with a spoon
- Add water or water/milk mixture until mixture is pastry-like consistency.
- Let the mixture stand for half an hour
- Cut/grate mixture into pot of boiling water.
- Remove pieces when they float to the surface.
Notes
- Knoepfli tastes particularly yummy fried in a little bit of olive oil/ butter and served with cheese.
