Potato & Leek Soup
Ingredients
- 2 tbsp butter
- 1 large onion
- 2 leeks
- 2 tbsp plain flour
- 4 cups stock
- 3 medium potatoes
- 1 cup low fat milk
- Salt and pepper
Method
- Saute onions and leeks in butter until soft.
- Stir in the flour.
- Add stock (I use homemade chicken stock) and potatoes (peeled and cubed) and bring to the boil.
- Simmer until the potatoes are soft.
- Add milk and salt and pepper to taste.
- Puree.

- Makes six to eight serves.
