Potato, Bacon and Celery Soup
Ingredients
- 2 tbsp butter
- 1 large onion
- 6 short rashes of bacon
- 3 medium potatoes
- 4 stalks of celery
- 3 cups water
- Salt and pepper
Method
- Saute onions in butter until soft.
- Add sliced bacon.
- Add water and potatoes (peeled and cubed) and bring to the boil.
- Add celery, sliced in 1 cm pieces.
- Simmer until the potatoes are soft.
- Add salt and pepper to taste.
Notes
- Makes six to eight serves.
