Rhubarb Crumble
Ingredients
- 2/3 cup self raising flour
- ½ cup brown sugar
- 1/3 cup dessicated coconut
- 60 g butter
- 1 bunch of rhubarb
- Extra 3-4 tbsps of sugar
- ½ cup of water
Method
- Stew rhubarb with 3-4 tbsps of sugar and water.
- Pour into baking dish while warm.
- Rub butter into flour.
- Add the rest of the ingredients to the mixture.
- Sprinkle the mixture over the top of the crumble.
- Bake in a moderate oven for half an hour.
- Serve with vanilla ice cream.
