Shepherd's Pie
Ingredients
- Left over roast beef or lamb
- 2 large potatoes
- 100 g mushrooms
- 1 onion
- 1 tbsp cornflour
- 100 mL stock or gravy
Method
- Cook potatoes and make mash (using a tbsp of butter and a dash of milk
- If using left over roast, fry it up in a little bit of olive oil with finely diced onions.
- Add diced mushrooms.
- Add stock.
- Mix cornflour in few tbsps of cold water, add to mixture and stir until thickened.
- Place meat mixture in a pie dish and cover with mashed potato.
- Bake in a preheated hot oven for 20 mins.
Notes
- Serves four to six.
- For a more gourmet pie, sprinkle the top with cheese.
