Sour Cream Chocolate Cake
Ingredients
- 1 cup boiling water
- 125g dark cooking chocolate
- ¼ cup chocolate
- 1 tsp bicarb soda
- 1½ cups caster sugar
- 1 tbsp vanilla essence
- 3 large eggs separated
- 2 cups plain flour
- ½ cup self-raising flour (SRF)
- ½ cup sour cream
Method
- Put the boiling water, chocolate, cocoa and bicarb soda into a small bowl, mix and leave to cool slightly.
- Cream the butter, sugar and vanilla essence until light and fluffy.
- Add egg yolks and beat well.
- Gradually stir in the slightly cooled chocolate and cocoa mixture.
- Sift two flours and bicarb soda into mixture alternatively with sour cream until all added.
- Whisk the egg whites until until white and stiff and then fold through the batter evenly.
- Bake in a moderate oven for ~50-60 minutes.
Notes
- Makes two round cakes or loaves
- These cakes are great as is but for a special occasion I suggest icing it with Chocolate Ganache.
