Stuffed Capsicum

Method

  1. Half capsicums and remove seeds and white flesh, retaining stalks. Cook in the microwave until just tender.
  2. Add sauce and rice in equal amounts and heat.
  3. Fill half capsicums with sauce and rice mixture.
  4. Place thinly sliced cheese on top.
  5. Bake in moderate oven for 15 mins.
