Stuffed Capsicum
Ingredients
- 3 red capsicums

- left over bolognaisse sauce
- left over cooked rice
- tasty cheese
Method
- Half capsicums and remove seeds and white flesh, retaining stalks. Cook in the microwave until just tender.
- Add sauce and rice in equal amounts and heat.
- Fill half capsicums with sauce and rice mixture.
- Place thinly sliced cheese on top.
- Bake in moderate oven for 15 mins.
