Mangroves are usually found in warmer waters. The movement of the tides and the exposure at low tides means that there is a large variation in temperature on a daily basis.
 

Temperature can be measured using a datalogger. The datalogger can be set  to record the temperature of the water at whatever interval is required. The data can then be downloaded into a computer program and graphed.
